HOTELS & RESTARAUNTS
The hotel, including Blue Duck Tavern located within the hotel, began composting with Compost Crew and diverted over 46,350 pounds of food waste in less than a year.
Simple, seasonal, healthy salads and grain bowls made in-house from scratch, using whole produce delivered that morning.
